What's for dinner...........

Semalam dinner apa?

Makcik dah seminggu home alone...kena tinggai lagiii......

Makcik makan tidak lah cerewet sangat...asal perut tak nyanyi lagu arab kira okay lah.

Broccoli dalam fridge tu dah banyak hari....sebelum dia jadi kuning, kena lah buat sesuatu....

Nak buat sayur tak lalu nak makan nasi.





BROCCOLI SOUP









Ilham dari:
Pol Martin: Easy Cooking For Today

1 head broccoli (chopped & cleaned)
1 tablespoonful  butter
1 yellow onion (chopped)
40 gm flour
1 chicken cube (~ 1liter chicken stock)
1/2 tsp basil (tak letak)
1 bayleaf   (tak letak)
1Tbsp chopped parsley (tak letak)
Salt and pepper.

Heat butter in pan and fry onion until soft.
Add chopped broccoli and season well. Continue cooking, stirring occasionally
Mix in flour, add stock and cook over low heat for about 30 minutes.
Blend in food processor.


Note: Makcik tak guna setengah bahan tu (bukan derhaka tapi tak ada stock).
          Masa soup tu tengah di renehkan (simmer), rasa garam lada.
          Bila agak2 dah capai kepekatan yang dikehendaki, tutup api and blend.
          Kalau masih nampak cair, no harm, boleh boil lagi sekali...that's what i do.


Best kalau makan dengan garlic bread, tapi disebabkan makcik tengah clearkan fridge and lamb lebihan sebelum ni masih ada dalam freezer, jadi makcik kawinkan lamb dengan broccoli soup lah for my dinner.

Braised Lamb

Made this quick dish, sons favourite so they ate without complaining. I say simple as I've had the lamb marinated earlier & freeze them.


Braised Lamb with Mango Salsa

6 pcs lamb shoulder (the size of your palm)

The marinade;
BBQ sauce (i use heinz)
1 Tbsp Cili powder
Dash of pepper
Salt
Garlic -crush/pound
Black soy sauce
Mint (fresh or bottled ones,available in supermarket)


Salsa: Mix together to your taste.
1 ripe mango-cubed
1 onion - sliced
Red/green cili (capsicum) - sliced
Lime/Lemon juice
Salt
Pepper

To cook; Heat oil and pan-fry lamb for about 3 minutes each side. This is just to get the meat a little 'charred'. Place meat in baking dish, cover, add the balance of the marinade and braised for about 30 minutes or until cook. 
Serve with salsa or any other stuffs (potato, coleslaw, vege etc) that you have-no fuss. 
Bottom line, don't get stressed up & enjoy your food.
