Chicken rice ala claypot

Salam

Kita cerita pasal makan dulu la ya.



Masakan ringkas

Dah pernah buat sebelum ni....tapi tak apalah, letak sekali lagi.

Chicken Rice ala Claypot:
-makcik-

3 pcs chicken whole leg-cut to small pieces (makcik kerat 5); cleaned

Marinade:
1" ginger; bruised or sliced
3 garlic, sliced
1 onion; sliced (i don't use)
1/2 chicken cube
2-3  Tbsp dark soy sauce
3 Tbsp light soysauce
a dash of sesame oil (optional)
Salt if needed

6 pcs dried mushroom (makcik guna 3 sbb besar gedebak); soaked

2 cups rice (makcik used basmathi)
3 cups water

If previously I used rice-cooker method, this time i tried steaming.


Makcik steam dalam ni 

Method:

  1. Marinate chicken.
  2. Wash & drain rice
  3. Prepare steamer 
  4. In a suitable 'steamable' bowl, place rice, spread evenly.
  5. Pour water on top
  6. Place chicken on top of rice.
  7. Steam for 30 minutes or until done.


Boleh lah hidangkan dengan cili padi-in-kicap, isi ikan kering atau telur masin.

Note:

  • Resepi makcik ni selalunya ringkas saja, yang ni pun sebagai reference, boleh tambah apa apa yang disuka, boleh omit apa yang tak ada...asal main ingredients tu ada.


  • Boleh masak atas dapur, dalam rice-cooker, steam atau microwave.

Nasi Daging



"mem, i nak masak macam you buat hari tu...cari dalam blog tak ada resepi..." that's my schoolmate Jun texting about nasi daging yang makcik pernah buat masa dia orang datang gather gather kat rumah few years back.


Kerap juga buat tapi entah pasai apa, tiap kali masak, tak sempat nak ambik gambar dalam keadaan 'bersedia' ;lawa2.

Yang dapat selalunya yang dah dalam pinggan....tidak terkecuali, kali ni jugak.



Juadah simple and sedap. No fuss.






Nasi Daging:

1 kg daging di rebus bersama 1 sudu besar cuka serta sedikit gula batu ( kalau x ada gula batu,  gula biasa.pun ok, nak rebus gitu saja pun boleh, asal daging empuk).

1 kg beras basmathi, basuh dan toskan (1kg beras anggaran 3 tin evaporated milk)  **

4 1/2 tin air rebusan daging (kalau tak cukup tambah air biasa)

4  sudu besar rempah sup *
2 sudu besar rempah kurma *
2 sudu kecil garam masala *

6 ulas bawang putih; hiris halus
2 bawang besar;  hiris nipis
1 " halia; mayang halus
3 kayu manis
3 bunga lawang

Sedikit daun sup/daun bawang potong agak2 1 "

Sedikit minyak untuk menumis ( boleh tambah sedikit minyak.sapi)

- Panaskan minyak & masukkan kayu manis & bunga lawang. Kemudian masukkan bawang putih, bawang besar, halia & kacau hingga lembut & naik bau.

- Masukkan rempah (*), kacau sekejap dan masukkan air daging, cukupkan rasa garamnya.

- Bila dah mendidih, masukkan beras serta daun sup/bawang.

- Masak macam masak nasi biasa.

- Hidang bersama kerabu timun & hirisan daging cicah air asam

Note:

- (**)  ikut sukatan sendiri, kalau guna, cawan utk sukat beras, guna cawan yang sama utk sukat air)
- Guna beras biasa pun boleh
- Boleh juga makan dengan dalca atau lauk lauk lain kalau suka.
- Makcik masak dalam rice cooker; letak beras dlm rice cooker. Tumis bahan2 dalam periuk lain, bila mendidih, tuangkan dalam rice cooker dan tekan 'cook' seperti biasa.

Air Asam:

Sambal belacan
2 biji tomato - hiris
2 bawang besar- potong dua & hiris nipis
sedikit, tomato sauce

Gaul semua bahan & cukupkan rasanya-tambahkan sikit air asam jika perlu.



Kerabu timun:

2 biji timun, buang kulit, 'cakar dgn garpu', hiris nipis
1 biji bawang besar, hiris nipis
Sedikit hirisan cili merah & hijau sekadar nak bagi warna.

Gaulkan bahan atas dengan gula, garam serta sedikit cuka - sesedap rasa.

Simply sedap

Claypot Chicken Rice.

This is an 'ala-claypot' chicken rice as i don't have claypot to put my rice into. 
A simple procedure where you have it all; rice and chicken in one cooking, highly recommended to busy women out there. 



Ingredients:

2 cups rice, washed & drained
10 pcs dried shitake mushroom (cleaned & soaked for 1 hr)
1 chicken, cleaned, cut to 20 pcs
3 1/2 cup liquid (ie water + liquid from marinated chicken)
Sesame oil (optional)

Marinade:

2-3 Tbsp dark soy sauce (caramel type)
3 Tbsp light soy sauce (more if you wish)
5 garlic, crushed
1 onion, sliced
1" ginger, crushed
1 chicken stock cube
Salt, only if required



Method:

  • Marinate chicken with the marinade. 
  • Drain chicken and place in rice cooker. Retain the excess liquid.
  • Squeeze excess liquid from shitake mushroom and place on chicken.
  • Put rice onto chicken/mushroom, distributing evenly.
  • Add 3 1/2 cup liquid(*) into rice cooker.
  • A dash of sesame oil (if using).
  • Cook as normal.

(*)Using the cup (or whatever cup used to measure rice), measure the excess marinade, top with plain water to make 3 1/2 cup liquid

Serve hot. You can garnish with either salted fish or salted egg, & spice it up with cut cili padi or cili sauce. 
I made sauce by mixing blended cili with cili sauce, salt & sugar and stirring over medium fire to thicken.


Note: 

  • This is just a reference, you can adjust quantity/ingredient to your need. 
  • 3 cups rice ideally yield 6 serving, but can differ in actual case.

Nasi Briyani


3 cups rice, wash and drained
1 cup evaporated milk
3 cups water
3 heaped tablespoon briyani powder
1" ginger, julienne (*)
1 big onion, sliced (*)
1/4 pc of each green, yellow & red capsicum, diced (*)
1 small carrot, julienne (*)
1 small tomatoes, seeds removed, diced. (*)
1 cinnamon bark (*)
2 star anise (*)
3 cardamom (*)
1/4 cup oil
~ 2 tablespoon ghee
2 tablespoon plain yoghurt - optional
1 tablespoon condensed milk ( or 2 teaspoon sugar)- optional
Salt to taste
1/3 cup Cashew nuts
Raisin for garnishing

-Fry (*) until fragrant, put in briyani powder, stir and add in liquid (milk & water)
- Add in yoghurt, condensed milk and salt to taste.
- When mixture boils, add in rice. 
- Stir for a while until the liquid (sort of) dries up a little bit.
- Turn fire to smallest, cover pot with the lid and leave rice to cook.

=> if you use rice cooker, put drained rice in rice cooker. Fry ingredients/liquid in separate pot and pour boiled mixture into rice. Cover & let it cook as usual.

Nasi goreng kantan




Nasi Goreng Kantan

3 cups cooked rice
3 pulps garlic
1 lemon grass
1/2 ginger bud(bunga kantan)
1 tbsp dried prawns (optional)
7 bird's eye cili (cili padi)
Light soy sauce
oil for frying

Pound/blend garlic, lemon grass, gingerbud, dried prawns & cili padi.
Heat oil & fry pounded stuffs until fragrant
Add in rice & stir until it mixes well, add soy sauce to taste.
Garnish with finely chopped kaffir lime leaves (daun limau purut)
Serve & enjoy 


Putu Mayam

Putu mayam or putu mayong as it is known here is Penang is another delicious, light food that can be taken at anytime of the day. Made from rice flour and cooked using steaming method
Putu mayam is eaten with sugar and grated coconut although some eat with curry or asam pedas. Mana nak beli?? Ada jual dekat food court atau di tepi jalan berhampiran pasar.
