Chocolaty.......



Triple Chocolate peanut butter cookies (source: Periplus; Biscuit & Slices)

Ingredients

125 gm butter
3/4 cup peanut butter
3/4 cup, firmly packed soft brown sugar
1 egg, lightly beaten
1 cup plain flour + 1/2 tsp soda bicarbonate
1/4 cup cocoa powder

White chocolate & dark chocolate for decoration

Method:
-Preheat oven to moderate 160deg C. Line trays with baking paper.
-Sift flour & cocoa powder.
-Cream butter & brown sugar until light and creamy
-Add in egg gradually, beating thoroughly after each addition..
-Add in peanut butter, mix well
-Lastly, use wooden spoon to fold in flour/cocoa.
-Roll the mixture in between two plastic sheets to about 1/4 " thick
-Press with biscuit cutter, shape of your choice. Otherwise, roll into small ball, press using fork to flatten.
-Place on lined baking tin and bake @ 160 deg C about 15 minutes or until done
-Cool on wire rack

To decorate, melt white chocolate using double boil method. Dip about 1/3 of the cookies into melted chocolate.
Place on wire rack to set. Repeat method for dark chocolate, this time, dip the other 1/3 side of cookies. Let it set on wire rack.
