Jom Masak Lagi - Savoury Bread & Butter Pudding

....From the newspaper, this recipe was given by my friend Hanim...

"Bila you buat, panggil lah I makan...."

That's what i did yesterday.............

And seperti selalu jugak, makcik ni kekadang derhaka juga dgn resepi ni...ikut apa yang ada kat rumah & perasan diva agak agak serupa MasterChef gitu....

Senang cakap, apa yang kita masak, kita olah is a new resepi kan?

Tak ada rules kata nak buat A mesti letak bahan bahan a, b, c, d......


Okay sebelum letak resepi....rasanya makcik dah kelirukan you all dengan resepi kat sini http://makcikkantin.blogspot.com/2012/11/ayam-duduk.html  tu kan.

Sorrylah if you all confused:

- Masa perap ayam tu, letak garam juga.

- Coke tu adalah tin yang berisi coke, buka tudung dia (lift tab), with coke still in can, position the chicken such that it sits on can & the open can is inside chicken's body.

- Coke inside can will evaporate during baking process, thus allowing chicken to stay moist throughout.

- it will not explode as the can is opened - DO NOT PLACE UNOPENed tin, cari nahas weiii

- Nak perap dengan apa pun boleh...ikut suka, nak buat ayam percik duduk pun boleh juga.....


Okay back to today's agenda (cheeehhhh, che gu speaking....)

Savoury Bread & Butter Puddding

The recipe:

6 slices bread, cubed
2 cups spinach; chopped & slightly sauteed in butter & garlic
1 cup button mushroom, quartered
1 cup vegetarian meat, cubed
2 tomatoes, quartered
1 cup grated cheese
6 eggs
1 cup milk
1 cup yoghurt/cream/milk
Salt and pepper
1 tsp paprika/cili flakes
Knob of butter

Preheat oven @ 180'C
Grease baking dish with butter
Spread bread in the dish
Fill dish with spinach, mushroom, vege meat and tomatoes
Beat eggs, milk, yoghurt, cheese, paprika, salt and pepper.
Pour over bread and vege
Bake for 30-35 minutes or until custard sets
Sprinkle some more cheese and serve warm.


Bread Sauce

1 large onion
3 cloves
3 cups milk
4-5 slices of bread, crusts removed & crumbed
1 bay leaf
Pinch of nutmeg
Salt & pepper
Knob of butter

Peel onion and stud with cloves. Place onion and milk in saucepan and heat to just below boiling point.
Add crumbs, bay leaf and nutmeg and stir till sauce thickens
Add butter and season to taste.





i atas ni adalah resepi asal dari paper ye...bawah ni resepi derhaka...
Dah derhaka, tak payah tulis la in so detail kan....

Resepi derhaka:

1. Roti,cubed & letak dalam bekas
2. Dalam bekas lain mix 1 can Campbell mushroom soup, milk, eggs(6), sedikit pepper and cayenne
    pepper.
3. Saute (guna butter) capcicum 3 colours-diced, tomatoes-diced, spinach- chopped. Tak payah lama, sekadar melembutkan saja.

    Masukkan 3 dan 2 ke dalam 1, kacau sebati.
    Sendukkan ke dalam bekas of your choice.
    Tabur cheese and cili flakes...and lada hitam jika suka.
    Bakar as required.
 



Frankly, i don't fancy the sauce as i don't quite like the 'clove' taste but no harm trying kan

LGK-PEN-LGK

When my son called to say he's coming home, he also listed his endless 'want-to-eat'.

Pizza was among them.



Pizza Base

A
500 gm bread flour
2 Tbsp milk powder
2 Tbsp sugar
3 tsp dried yeast (equiv to one 11gm packet)
Dash of pepper (optional)
Mix herbs (optional)

B
1/3 cup olive oil
250 ml water

C
1/2 tsp saltBold

Mix A in mixing bowl. Turn on mixer, add in olive oil.
Pour in half the water, and little by little after that (depend on temp/flour but i used all the water)
Add in salt and continue to knead.
You can tell, you have knead enough when the dough doesn't stick to the sides of bowl and also it is smooth in texture, soft to touch.
Cover bowl with wet towel/cling film and leave to rise for 1 hr, it will double in size


After the hour, punch the dough to remove air.
Divide the dough into 6 portion, flatten using your hand.
Let it rest for abt 30 mins.
Bake @ 170 *C for 10 minutes.(*)

I half bake so i can keep the base. Sometimes, i will put the filling and freeze it for use later.

Guling sekata dlm serbuk roti (roll evenly in bread crumbs)

Soft Honey Bun

Selembut dan sesedap nama...



Yes, first time puas hati dengan hasil roti.
Makcik dah buat banyak kali tapi bila hasil tak memuaskan, i always blame everything else but myself.......

......tak dak bread maker lah
......oven dah 'tua' lah
......proofing tak cukup lah
......yeast dah 'mati' lah
......and all other 'lah' that you can think of!

:)) biasalah tu kan......

Kali ni buat jadi pulak.....benda semua sama, resepi je lain sikit.

Jom kita tengok resepi......boleh lah anda cuba and kongsikan hasilnya.....

Kenyataan ni hanyalah untuk orang2 yg tak berapa terer buat macam makcik saja tau....yang dah sifu tu, dengar katanya, sambil tidor pun roti dia orang naik elok.

(Asalnya nak link-kan saja blog jintanmanis ni untuk sapa2 nak dapatkan resepi, tapi tak dapat nak buka pulak rumah dia, tak tau kenapa.
Jadi, makcik letaklah resepinya disini)


Soft Honey Bun

250 gm breadflour
1 1/2 tsp dried yeast
2 Tbsp butter
1 Tbsp milk powder
2 Tbsp honey
150 ml fresh milk / warm water
1/2 tsp salt
2 Tbsp water roux (*)

Method:

- Place flour, milk powder and yeast in a bowl/mixer.
- Turn on mixer and add milk/water slowly
- Add butter and pour in honey.
- Knead for 5 minutes or until it forms a dough and doesn't stick the side of mixing bowl
- Add in salt and knead until dough is smooth
- Proof dough ( i place in the same mixing bowl), covered for about 40-60 minutes until it doubles.
- Punch the dough (to remove air), divide into 9 equal parts(or however you like), place on baking tray/pan.
- Proof for another 40 minutes.
- Glace top with egg (or egg & milk or egg, milk, honey)
- Bake at 170-180 deg C for ~ 20 minutes or until brown.
- Remove from oven and glace top with butter


* How to make water roux (I got this from mamafami, another Roti-Sifu)

25 gm flour
125 ml water.
- mix water and flour and stir over slow fire until it becomes paste.
- Cool before use.
- Extra/unused water roux can be kept in fridge up to 2 days.

Bukan makcik buka kelas, makcik hanya rajin kawan dengan benggali roti.

Tapi dah ada buku roti, siap dengan tips lagi, mana tau satu hari nanti bertukar jadi usahawan wanita berjaya makcik roti pulak kan? siap ting tong ting tong naik moto keliling kampung juai roti.......

I've got pocket......you ada?

Masa blogwalk hari tu singgah rumah Along.....peeped thru her kitchen window and......hmmmmmmm
Balik rumah dgn menghafal petua petua dari dia, maka terhasil lah yang ni semalam.
Thanks Along & whoever that originally came up with this brilliant,simple idea .

Macamana nak buat?

2 keping roti, makcik guna gardenia (dapat 2 poket, nak lebih, tambah roti)
1 biji telur, lightly beaten
Breadcrumbs
Minyak untuk menggoreng

Letak dua keping roti together.
Gelek nipis.
Tekap dengan gelas untuk dapatkan bentuk bulat atau biarkan seperti asal( empat segi)
Celup dlm telur
Gulingkan dalam breadcrumbs
Goreng 'deep fry' sampai cantiklah warna dia(brown)

Baru keluar kuali...sila abaikan 'stretch marks'

Potong dua. Anda akan dapat dua poket separuh bulat(kalau tekap dgn gelas) atau dua poket '
diagonal' (ish, payah sungguh nak susun ayat, maklum dulu BM tak pas)
Isilah poket tu, bukan poket you all tau dengan inti kesukaan keluarga.

Potong dua (halves)

Inti makcik

Bawang besar, potong dadu
Daging burger
Cili sauce/BBQ sauce
lada hitam

Panaskan minyak, letak daging burger, kerat keratkan into smaller pieces dengan senduk.
Campurkan bawang dadu tadi, goreng hingga daging burger agak garing (agak agaklah ye).
Masukkan cili sauce/BBQ sauce & lada hitam ikut citarasa.

Bila dah masak, gaulkan dengan mayonaise.

Letak sayur kesukaan dalam poket & sumbatlah inti/filing.
Selamat menjamu selera.

Pizza, Holidays, Quesadilla & Guacamole

Amboiiiii, perasan macam dok kat Spain aih....

My holidays (holiday= out of house) were actually attending weddings and of course visiting kaum kerabats along the way....

We had wedding invitations; one in KL and one in Ipoh. One a friend and another, a sister-in-law. Both fell on the same day.

Congratulations to Hana & Rizal (friend's daughter) and Nurul Asma & Hafiz (my niece), sorry gambar pengantin tak ada sebab makcik yang dok sibuk posing kat pelamin....

Selamat Pengantin Baru, moga berkekalan hendaknya.

Dah cuti tak sahlah kalau tak jalan jalan cari makan kan?

We eat at home, we eat out, snap here, snap there, kat sini saja yang menjadi.......

Both were good we ordered two sets of each.


The night before we left for KL, I made this crusty pizza, actually i've made this twice. The first time i only topped with sauce,onions and cheese. The second time with pepperoni, bell pepper & onion. Thanks to Ijan of blogresepi for the wonderful recipe.

Good Morning.....

Had your breakfast?

Jom breakfast sama sama....


French Toast with a twist

2 pcs of bread
1 egg; lightly beaten, add a bit of evaporated milk, salt & pepper
Butter
2 slices of tomatoes
1 slice cheese

  • Heat butter in a pan (slow fire)
  • Coat bread in egg mixture
  • Place both in pan and let brown on one side.
  • Once browned, turn one of the bread (still in pan )
  • Place sliced cheese and arrange sliced tomatoes on top of it. Do it quickly pls, otherwise the other bread's bottom turned black
  • Take the other piece of bread
  • Place on top of the stacked bread,cheese, tomatoes, browned side facing tomatoes.
  • Turn the whole lot over to brown the other side. (You may need another turner at this point to hold the stack together)
  • Lift from pan and into serving plate, cut diagonal
  • Enjoy your french toast with baked beans.

Biskut "roti bakar"

Entry hari ni kira cam hentam keromo lah sikit (ish ish dah berapa tahun tak dengar 'hentam keromo' ni ye?)

Laaaaa, apasal makcik punya story kat bawah tu kena 'potong'? ni sudah error, takpa, you all baca dulu na, nanti makcik troubleshoot masalah ni....

Kita cerita pasal rotilah. Bila dah tak larat nak habiskan atau tarikh luput dah nak hampir, apa semua buat dengan roti?
Adakah;
  1. Bengkang roti - kat rumah makcik tak jalan!
  2. Bread pudding - hanyalah di'englishkan' bengkang kat atas tu...pun tak jalan!
  3. Bagi burung makan - burung pun tak banyak kat sini, kalau ada pun sedikit memilih.
  4. Breadcrumbs - buat jugak tapi tak terhabis pun
  5. Buat yang ni?? Haaaa, gerenti jalan sebab;
- boleh simpan lama, jadi sikit sikit, lama lama habis lah.
- cicah neskepe atau kopi..perggghhhhh.
- sungguh enak di makan begitu saja....(nyanyilah macam iklan roti terkenal tu)

Roti tak habis, di sapu butter, tabur gula, bakar garing....
dah sejuk, simpan dlm bekas kedap udara....hmmmm


Dah berhari hari makcik sibuk...... bergelut jahit nak habiskan order......

Bread bread


I got this recipe from lina who in turn got it from the ever clever mat gebu. They name it 'roti naik' meaning 'raised bread'. With a little bit of alteration, it may not be as good as theirs but whatever it maybe, it turned out good in my kitchen.

Simple Sardine


Sardine Rolls

Ingredients:
1 large can sardine
1 tbsp cili boh (blended cili), or more if you like it hot
1 tsp tamarind (asam jawa) paste
1 onion - diced
2tbsp water

1 loaf of bread (ready sliced ones)

Eggs, lightly beaten. Add a dash of pepper if you like.
Oil for deep frying

Method:
Place all ingredients in a saucepan, stir to mix, add salt if desired.
Cook under slow fire until mixture is slightly dry. Leave to cool.
Use the rolling pin to flatten bread.
Spoon enough filling onto bread, about 1/2" away from edge.
Roll tight and secure the other end with water.
Heat enough oil for deep frying.
Toss sardine roll into beaten egg and fry till golden brown.
Serve. Yield about 15 pcs

Pizza

Masih ada masa sebelum 'beradu', nak share juga resepi pizza yang makcik buat 2 hari sudah.....

Pizza base
500gm high protien flour (fr experience, plain flour pun ok)
1 packet (11gm) dry yeast
1/2 cup olive oil
1 1/2 cup water
1 teasp salt

Knead all ingredients together, make sure it does not stick to the bowl, otherwise,add a little bit more flour.
Leave to rise (double) in the bowl, about 30-60 mins, covered with wet towel.
Divide the flour into 4 portion (will fit 4 , 9"baking tray). This option is open, depending on your baking tray. Leave to rise or abt 15 mins.


Normally, i will half-bake my base, so i can keep for use later.
To proceed, top the base with tomato paste of your choice (i will share later my version of pasta sauce), sometimes i use Prego pasta sauce or just canned tesco chopped tomatoes
Top with your favourite toppings, pepperoni, basil leave, onions, capcicum or just chopped garlic, followed by grated cheese (mozzarela/cheddar), sprinkle with a dash of oregano, black pepper and bake till the cheese turns slightly golden .
Eat it while hot and enjoy.
I made this very simple as i sometimes use normal bread or pratha bread (you can buy this in supermarket) as base.
