Maple Syrup Jumbles


Salam Jumaat.

Dah simpan lama resepi ni.....dari mana dapat pun dah lupa, tapi makcik letak sini, senang nak refer nanti

Simple snack & tidak mengecewakan,

Tak tau kategori apa, kita letak dekat cakes/teacakes lah ya.

Maple Syrup Jumbles

Ingredients:
  • 90 g butter
  • 1/3 cup maple syrup
  • 1 1/2 Tbsp castor sugar
  • 4 cups (120g) cornflakes
  • 1/2 cup chopped roasted cashew nuts
  • 1/4 cup desiccated coconut
  • 1 Tbsp toasted sesame seeds

Method:
  1. Combine butter, syrup and sugar in a pan and stir at low heat, till sugar just melted
  2. In another bowl, mix together all the other ingredients.
  3. Add in syrup and mix to incorporate the syrup/dry ingredients.
  4. Drop in patty tins ( i put in paper cups)
  5. Bake @ 180'C, abt 10 mins.

Cranberry Scones


Makcik tengah bersiap nak 'melawat kawasan'{=market atau kedai mamak atau kofi haus (ceh) atau rumah member atau klinik atau.....ih banyak sgt atau makcik oi} tapi semangat nak update blog meluap lah pulak..

Dah buat lama dah, cuma tak masuk sini je lagi.

Cranberry Scones
(wendy --->makcik)

125gm all purpose flour
125gm cake flour (original recipe only called for all purpose, I substituted half with this as a safety measure)
1 Tbsp baking powder
1/2 tsp salt 80gm dried cranberries, coarsely chopped 120gm cream cheese, room temp
30gm butter
90ml milk
1 egg, 1 Tbsp removed for glazing
Glaze 1 Tbsp egg mix with 1 tsp milk
Extra melted butter for glazing


1. Preheat oven at 200C. Combine both flours and baking powder. Sift twice to aerate. Mix in salt.
2. Beat cream cheese and butter until smooth. Beat in flour mixture until it resembles fine crumbs.
3. Combine egg and milk and pour into (2).
4. Mix with a spoon until moistened. Lightly mix in cranberries.
5. Spoon batter into floured moulds and lightly tap to flatten. Lift mould carefully.
6. Glaze scones with egg mixture.
7. Bake for 9 minutes.
8. Remove from oven and quickly brush on melted butter. Put them back into the oven and bake for another 5 minutes.
9. Leave to cool for 10 minutes.
10. Serve warm with butter an
jam. (I used butter and golden syrup and it was lovely)

Chocolate Layer Cheesecake


Meh kita sama sama buat kek ni, sedap tau.

Chocolate Layer Cheesecake

8 x 8 bake pan (preferably loose bottom)
180 deg C (depends on your oven)

Ingredients

A
250 gm melted butter
4 Tbsp cocoa powder

B
250 gm cream cheese
100 gm castor sugar
1/4 tsp lemon juice
1 A egg

C
2 eggs
150 gm castor sugar

D
130 gm self raising flour
1 tsp baking powder

Method:
  • Combine A. Leave aside
  • Beat cream cheese, sugar & lemon juice until evenly mixed. Add in egg. Put aside.
  • In another bowl, beat C until light & fluffy.
  • Add D (flour) & A (choc mixture) alternately, mix well.
  • Place half portion of choc mixture in bake pan.
  • Pour cheese mixture on top of the choc mixture
  • Pour the remaining choc mixture to cover the cheese mixture.
  • Bake for about 60 minutes or until skewer comes out clean.

Cappucino Cheesecake





Cappuccino Cheesecake

Filling:
250 gm cream cheese
120 gm icing sugar
200ml whipping cream
3 eggs ( separate yolk & white )
1 tsp vanilla
2 Tbsp + 2 tsp cornflour - sifted
2 Tbsp + 2 tsp plain flour - sifted
1/4 tsp cream of tartar or 1 tsp lemon juice
1 Tbsp instant coffee powder (mix with 2 tsp hot water)
1 Tbsp cocoa powder (mixed with 1 Tbsp hot water)

Base:
125 gm plain sponge mix
3 eggs
1 Tbsp instant coffee powder (mix with 2 tsp hot water)
30 ml milk
50 gm melted butter.



Method:
- Beat cream cheese until smooth. Beat in icing sugar followed by whipped cream, egg yolk, vanilla, flour. Beat until soft/creamy. Set aside. Prepare base.
- Preheat oven to 180 deg C. Grease 23 cm round false-bottom cake pan.
- Whisk sponge mix, eggs, coffee mixture and milk until mixture is thick & glossy. Fold in melted butter. Pour mixture into cake pan & bake ~ 15 minutes.
- Whisk egg whites until foamy. Add cream of tartar (or lemon juice) and whisk until firm. Fold into cheese mixture. Transfer 250 gm of the mixture into another bowl. Stir in coffee/cocoa mixture to the remaining cheese mixture.
- When base is done, remove from oven. Adjust oven temperature to 160 deg.
- Spread the coffee cheese mixture onto the base (sponge cake). Bake for 30 minutes or until filling is set but slightly soft in the center. BAKE in water bath.
- When filling is set, remove from oven & spread the plain cheese filling onto the coffee cheese mixture. Bake a further 30 minutes or until set.
- When done, remove cake pan from oven, stand for 10 minutes & then transfer cake o wire rack to cool completely. (What I did: I leave cake in the oven (oven off) with door closed for 15 minutes. Then I take out from oven and let it cool completely in the cake pan.)
- Sift cocoa powder onto cake. Serve immediately or chilled.


Sorry, cake not 'nicely groomed'. Observe the three layers:-base(sponge cake), the coffee cheese & the plain cheese layer.


I double the filling and  have it baked without the base (as in the two pictures above)

Baking baking

Feels like baking today. I got this recipe while visiting  ummi's kitchen & have kept it for sometime.

It was my first try so I halve the recipe.....(full recipe at ummi's). Thank you ummi


Strawberry Chocolate Marble Cake

Ingredients:
5 eggs 
42 ml water
225 gm sugar
210 hongkong flour (*)
53 gm self raising flour (*).........(*) i use only self raising flour
200 gm butter
1/2 Tbsp strawberry paste (+ a little bit red colour if you want it bright red; i don't use)
1/2 Tbsp chocolate paste
1 tsp vanilla flavour

Method:

- Beat butter till creamy
- In another container, mix eggs, water, flour, sugar and beat - I mix this in a blender.
- Add flour mixture to butter and beat again until well mix (like you beat sponge mix)
- Divide into 3 and stir in paste separately in each portion; red (s'berry), brown (chocolate) and the original colour.
- Place a spoonful of the original mixture in a baking pan, followed by chocolate and strawberry(one on top of the other). Continue this process until finish. 
- Bake @ 170 deg C for ~ 40 mins (depending on oven)

Cookies 'n' Cream Cheesecake

Cookies 'n' Cream Cheesecake

My youngest son (18 yrs old!)had requested this for a long time, only now I manage to do it. He called it oreo cheesecake. 
I just use the recipe as the guide. Herewith the actual recipe.

Cookies 'n' Cream Cheesecake (source: Celebrity Chef's Cookbooks-Cheesecake Seduction)


Ingredients:
Base
100 gm butter, diced
170 gm digestive biscuits, crushed
30 gm brown sugar
30 gm cocoa powder, sifted
50 gm cornflakes, crushed
40 gm almond flakes

- Heat butter in pan and add all the other ingredients.
- Fry till fragrant and press in 23 cm false bottom cake pan
- Cover cake pan & refrigerate for at least 30 minutes

Notes: In replacement to the dry ingredients I used leftover biscuits (samperit, almond, cornflakes etc), that I crushed and kept frozen. 

Filling:
500 ml thickened cream (i used whipped cream)
80 gm icing sugar
2 tsp vanilla
1 1/2 Tbsp gelatine powder dissolved in 80 ml water
250 gm mascarpone cheese ( I use normal cream cheese)
100 gm Chocolate sandwich cookies, quartered 

- Whisk thicken cream, icing sugar and vanilla until mixture thickens
- Pour gelatine, mix well and add mascarpone cheese.
- Stir in cookies using spatula.

Pour filling onto biscuit base. Cover and refrigerate, possibly overnight.

( What I did - I beat cream cheese with icing sugar until smooth. Then add whipped cream slowly and beat further. Add in gelatine, mix well and lastly, stir in cookies)



Decorate with whipped cream and cookies 

Note: I did not decorate with whipped cream as my son said 'sudah cukup creamy'  (enough of the cream).

more cuppies




A friend requested to show her how to make cupcakes. With my limited talent, we did at her house this morning, and had everyone including her three teenage girls to ice the cuppies. Meriah!

I used orange cupcake recipe from kak liza (hanieliza.fotopages.com), with little alteration, thanks kak

Ingredients:

300 gm butter
270 gm castor sugar
5 eggs (5 yolk, 4 whites)
320 gm self raising flour
2 Tbsp orange juice (from 1/2 orange)
2 Tbsp sunquick
orange rind from 1 orange.

Method:

- Beat butter and sugar till light/white.
- Add in egg, one at a time, make sure it mixes well before adding another one
- Fold in flour 
- Finally, mixed in the juice/rind.
- Spoon into cupcake mold, bake @ 180 deg C for ~ 20 mins (varies with oven)
- Cool on wire rack



Butter icing: (source: cari forum; food & recipe)

500 gm butter
500 gm krimwell
250 sifted icing sugar

- cream butter & krimwell until creamy.
- Add icing sugar gradually.
- Continue to beat until smooth.
- Put colour of your choice and start icing.

cupcakes





Just to share some cuppies that i made yesterday. No occasion, just being rajin. 
I reckon there's many more i need to learn from the experts. Appreciate comments/tips on my queries.
- My sugar icing (butter, krimwell & icing sugar) is quite soft, why?
- Is there a specific colour for icing? This normal liquid one did not look good. 
- How to achieve a 'whiter' basic icing, mine is slightly 'yellowish'

Steam Chocolate Cake

Want a home made cake? No oven? No cake mixer? Don't worry...try this one and you'll never regret.
(Excuse me, i just noticed a typo error in my picture)


I want to share  a very simple yet yummylicious steam chocolate cake.

Ingredients:
A - mix and stir under low heat until sugar melt
1 cup sugar
1 cup cocoa powder
1 cup milk
1 cup oil (i use 1/2 cup melted butter & 1/2 cup oil)
1/2 cup condensed milk

B - sift
1 1/4 cup self raising flour
1 tsp soda bicarbonate

C - beat lightly
3 eggs

Method:
- Boil water in a steamer.
- Beat C (eggs) lightly, add A followed by B. Make sure all ingredients are well mixed.
- Place mixture in lined cake tin and steam for about 45 - 60 mins 
- Cool cake on wire rack & top with melted chocolate (ganache)


Besides the cake, I also tried  Talam Keladi, the recipe I got from bro rozzan's blogspot.
My first attempt, it was good but the colour doesn't look 'appetising' as seen here, the nice coloured one was by bro rozzan and the 'pucat' one was mine. Thanks bro, lain kali akan ku cuba lagi.

Banana cup cakes



Ingredients:

1 1/4 cup flour
1 tsp soda bicab
pinch of salt
1 cup castor sugar
1/2 cup oil2 eggs
1 cup mashed banana (~ 5 pcs pisang emas)
1 tsp vanila

Method:
- Sieve flour, soda & salt
- Whisk sugar, egg & oil till light
- Add banana and vanila
- Fold in flour.
- Spoon mixture into paper cups.
- Bake ~ 25 mins (until done)

Yoghurt & raisin cake


As promised. the recipe

Ingredients:
4 eggs 
240 gm butter
300 gm s/r flour
240 gm plain yoghurt
160 gm raisin (i use blackcurrants)

Method:
- Cream butter & sugar until light.
- Add eggs, one at a time.
- Fold in yoghurt followed by flour.
- Lastly, add raisin (b'currant)-mix well
- Pour in lined baking tin
- Bake @ 170 deg for ~ 40 mins (varies with oven)
